Bean Varieties

Forastero

This variety (known as bulk cocoa) dominates in world chocolate production. The high yielding plants of forastero make it an easy choice for growers. This cocoa is generally earthy and simple.

Trinitario

This variety makes up less than 10% of the total cocoa production in the world. The trinitario bean is a hybrid of Criollo and Forastero and, depending on the ratio and the terroir, the taste profile will differ.

Nacional

This variety is the least known cocoa. It was recently rediscovered in Peru in 2011. It is regarded as the world’s rarest cocoa. Chocolate made with nacional beans are rich, creamy, and with little bitterness.
